Shiitakes are grown on a mix of sawdust and bran, generally 80% sawdust and 20% bran or 90% sawdust and 10% bran. Do not grow on master’s mix, as it is highly likely to be contaminated.
Shiitake mushrooms (Lentinula edodes) have a unique cultivation process compared to many other mushroom species. While traditionally grown on logs, they can also be successfully cultivated on 3-4 kg substrate bags of sawdust. The mycelium colonization for shiitake is notably slow, taking around 6 weeks for complete colonization. During this process, the mycelium initially appears white but then undergoes a distinctive browning phase, which takes about two additional weeks. Once fully colonized, the plastic bag(mushroom bag) is removed, and the entire block is placed in a fruiting room with high humidity (80-90%) and temperatures between 7-21°C. After the first flush of mushrooms is harvested, allowing the block to rest for about two weeks before initiating the next fruiting cycle is crucial. This resting period is essential to prevent contamination. Other things to prevent contamination during the fruiting stage are to keep the temperature lower and maintain adequate airflow.
